Beef kidney fat, or suet, is the highest quality, most nutrient-dense fat surrounding the organs of the cattle, prized for rendering into pure, mild-flavored white tallow. It is best rendered slowly over low heat to create a versatile, healthy fat that can be used for cooking, soaps or skincare products.
